  • 1/4 large sweet potato, peeled and cut into 1/2-inch cubes

  • 1/4 large red onion, diced

  • 1 tbsp. extra-virgin olive oil

  • Sea salt, Freshly ground black pepper

  • 1 lb. boneless, skinless chicken breasts

  • 1/2 tsp. garlic powder

  • 1/2 tsp. ground ginger

  • 1/2 small clove garlic, minced

  • 1 tbsp. creamy peanut butter

  • 1/4 c. Juice of 1 lime

  • 1 c. cooked brown rice

  • 1/2 avocado, thinly sliced

  • 1 c. baby spinach

  • 1/2 tbsp. Freshly chopped cilantro, for garnish

  • 1 tsp. Toasted sesame seeds
